For just a casual quick ride I like rolling up to Mt. Charleston and coming down the backside and out to the 95 in a big loop.

Ride to Shoshone through Tecopa then back up to the Summit.

If it has to be local, then the VoF trip Les & I did when she had her bike.

I changed my mind. My new favorite is the gorge run up in AZ near St. George. sham fucking wow what a ride.
