Power bars, trail mix, water, vitamin/electrolyte water...variants of those.

Most of the time, nothing. Just wait till the next stop for gas to eat something.

HOWEVER -

Since i have tried this new oatmeal that olympians use to start off their training days..

Crazy energy. Great way to start the day and a ride with a full stomach and a shit load of energy.

Tigermilk bars and a small water, then get water everytime i stop for gas. No tank bag and short legs on my bike.

I always try to have at least a Cliff bar and a bottle of water in the tail compartment. I have been thankful for these on more than one occasion.
