Call the hotel directly and see if they are willing to change the date without penalty. Just depends on each property how willing they are to work to accomodate the request.

After all, you're not technically cancelling, you just need a different date. However, if they are real tight for the new date, they will most likely say no to your low rate, but might be able to negotiate a higher rate and not eating your non-refundable rate at the same time.
